Today it feels like spring like and nature is feeling it too.....what a contrast to a week ago, seems like a dream now.

There seems little merit these days to think of classical seasons. Instead we have to stay connected to our external environment, stay in the flow and respond accordingly 💞🌍❄🌞
I 💚 a mung bean. They are lower in anti nutrien I 💚 a mung bean. They are lower in anti nutrients which are common in other types of legumes, making them comparatively easier to digest. 

The yellow ones are the green ones without their jackets on and are even easier to digest than with their jackets on 🌟 

I like to soak them for a few hours before cooking them and I tend to cook a large batch and incorporate them into different meals. Lunch today I combined them with bulgur wheat, parsley and some tasty seasoning. Tonight they are destined for a mung bean dhal 😋 

Anytime you feel like your digestive capacity is low power🔋they are a great meal to have as they help bring you back online. 

With their jackets on they are high in folate and other minerals. All in all Little powerhouses 💪
