Sesame Sugar Free Cookie Recipe
Sesame seeds are a wonderful source of calcium, zinc, phosphorus, iron, copper and B vitamins. Β They promote great strength and vitality. To read more about the benefits of sesame seeds click here. These properties have been further enhanced in this recipe with the addition of protein packed peanut butter.
Stevia is from a plant called Stevia Rebaudiana which has a naturally sweet taste but doesn’t affect the glycaemic index in the way other sugars do and actually has a glycaemic load of zero. Interestingly the stevia glycosides, the molecules that create the sweet taste activates both sweet and bitter taste receptors simultaneously. Some Stevia has been processed to reduce the bitter stimulation.
I personally have found it hard to create a good Stevia recipe as it has completely different properties to other types of sugars. However, here I think it works brilliantly!

Cooking and Preparation Time 20 minutes
Makes 15 cookies
Ingredients
Stevia 50g
Smooth peanut butter 50g
Butter 50g
Tahini paste 50g
Gluten free flour 130g
Baking Powder 1/2 tsp
2 tbs Sesame Seeds of each black and white
Method
Preheat the oven to 200ΒΊC/180ΒΊC fan (400ΒΊF), Gas Mark 6
If you are not using a non-stick baking sheet then line with parchment paper
Mix the stevia with the peanut butter, butter and tahini paste until smooth.
Then mix in the gluten free flour and baking powder to form a soft dough.
Sprinkle the sesame seeds onto a side plate.
Take a heaped tablespoon of the mixture and shape with your hands into a ball, compress slightly and then roll in the sesame seeds to give a good coating.
Place on a lined baking sheet and put in the over for 15 minutes until cooked and slightly golden in colour.
Allow to cool and enjoy when hungry. Can be stored in an airtight container for a few days.
